    Tartaric acid crystals are used at the rate of approximately 1 g/L of wine to reduce the pH by 0.1 units. The crystals are dissolved in a small volume of wine and the solution is added to the must before the start of fermentation. If the wine will be cold stabilized, the rate of addition can be increased to 2 g/L.
