Description
Kveik, farmhouse ale yeast, dried, original strains.This kveik is a Norwegian farmhouse ale yeast that has a multiple strains in it which gives it its unique flavor
and characteristics.
I most often collect the kveik by top cropping and bottom harvesting and I always brew the same traditional way
that is fairly high gravity, low hops and high pitch temperature and fermentation.
Each pack contains enough kveik to ferment 20-25 liters of beer (up to 6,5 gal). Kveik is under pitch by 50-60%.
You don’t need to make a starter or it will be an over pitch, you can pitch the yeast in its dried form or you
can rehydrate it in 28-35°C wort.
Ferment at 28-36°C, less fermentation temperature longer fermentation time, less flavor.
I ferment at 30°C and fermentation is done in 3-4 days with good flavor.
I have used these kveiks in a wide variety of beers, always with good results.
Palesner kveik however is a single strain that produces clean, lager-like beers and pale ales at high temperature as
high as 35°C without off flavors. At the high fermentation temperature beer can finish in as little as 3-4 days.
Each batch is tried before sale and tested.
