Chinook
:  Chinook is a high alpha bittering variety with aromatic characteristics.  Slightly spicy and very piney. When dry hopped in the last few minutes of the boil adds a wonderful herbal almost smoky aroma.  Released in 1985 in Washington State and Idaho from a cross between a Petham Golding and a USDA-selected male (63012M). Good substitute for bittering: Eroica, Galena, Nugget. Good substitute for aroma and flavor: Southern Cross, Sticklebract. Alpha acid content ranges from 12 to 14%
