Flaked white wheat is unmalted wheat in a flaked form. Containing strong grain flavor, it is used in many traditional Belgian styles. The flaked white wheat gives off a light straw color, cloudiness to a beer, and improves the head formation. The starch in flaked wheat is pre-gelantized and the protein content is pretty high.
